crafting white chocolate workshop: Sept 22-23


Over the course of two days we'll cover All things White Chocolate: methods and process tips for pressing cocoa butter from origin to craft single origin whites, % formulations for couverture vs bars, crafting white with inclusions, white chocolate gianduia (and other nuts with white), Map’s signature vegan white chocolate, and sweetener options. 

Hands-on crafting is the Map way to learn; students will make batches of white chocolate to share, taste, and take home. All ingredients included, along with morning coffee, lunch, and a white chocolate tasting.

Small batch-scaled for use by pastry chefs, chocolatiers, and bean to bar makers.
