Peru Ucayali River flash brew cacao for cold drinking chocolate

Ucayali River Cacao is a company that buys wet beans from farmers in the Pucallpa and Tingo Maria regions of Peru. I met Robin, one of the founders, last fall in Seattle at Northwest Chocolate Fest, before I’d had a chance to try his cacao. It was several months before I had the chance, and in a word: I was smitten. Possibly my favorite origin ever {don’t tell the other beans I use plz} for it’s unique, lilting flavors that range from soft sun-dried bramble berry to spice tannins.

the origin: Farmers are paid higher than market price for their fresh beans, and cacao is fermented in a central processing facility.

tasting notes: as a cold drinking chocolate we find dried blackberry, cinnamon, and a soft cocoa finish.
