As with our couverture, these are shipped in baker/chef-friendly slabs as we’ve found that pre-cut chocolate shavings lose flavor rapidly, and have a limited range of usefulness.

Choices of origins include:

Fiji Matasawalevu: or favorite choice for straightforward chocolate flavor, with soft floral notes of vanilla; low fiber/higher inherent cocoa fat.

Honduras Wampusirpi: all the good stuff: pecan, meringue, and date, this bean offers sweetness/an absence of bitterness even as high as 85%.

Vietnam Ben Tre: less suitable for enrobing, as this bean is higher in fiber/lower inherent cocoa butter, which makes it especially good for baking. Notes of brown sugar, kumquat, end note of burnt cinnamon (I mean this in the best possible context), which, in my thinking is why this origin works well as a milk chocolate, as origins that are strongly chocolate-forward can lack the edgy bitterness needed to tame the sweetness of sugar + milk.

Ecuador Costa Esmeraldas: mainly, because this chocolate crafts in such a wondrously deep brown/plum hue I just hope one of you will run with it. Dried Rainier cherry, walnut, a glance at what might be fig leaf.
