Roasting is the foundation of good chocolate: flavor development at the hands of the chocolate maker begins with a roast profile.

Join Map founder/chocolate maker/girl-of-many-hats Mackenzie in a women-only hands-on workshop focused on developing skills, gaining a deeper appreciation and understanding of the craft of roasting, using drum roasting, and connecting as women chocolate makers: we'll cover choosing a test profile based upon origin, profile times and temperature technique, loading, batch size, scaling from small roasters to large, record-keeping of profiles, troubleshooting, identifying mid-roast cues, and end of roast cooling methods. Sharing experiences and techniques--what has worked, what has not--plays a big part in the process of not just learning, but creating a craft-dedicated community.

Practice beans are included; students are welcome to pre-purchase beans from Chocolate Alchemy's extensive origin selection to roast and then ship (or transport) back home. Please email Mackenzie if you'd like to make use of this opportunity.

Workshop hours are from 9 am to 2 pm each day; class size is 6 so everyone has plenty of hands-on roasting time.
