We use transparent trade, relational cacao that can be traced to the farmers, and our cocoa powder isn’t dutched: industrial cocoa powder is “dutched,” (alkalized) by a chemical wash with potassium carbonate.

Uses: any recipe calling for cocoa powder or when you want to up your baking game a few zillion notches.

friendly fyi! cocoa powder can also be substituted in recipes calling for "bittersweet" or "semisweet" chocolate: use 3 tablespoons of cocoa powder + 1 tablespoon of butter (or coconut oil) for every ounce of chocolate required.
